For cooking you will need:
  • 2 beets:
  • 1 slightly salted herring;
  • 4 potatoes;
  • 2 carrots;
  • 1/2 onion;
  • 2 tbsp. spoons of vinegar;
  • 200-250 ml of mayonnaise.

  1. Peel and finely chop the onion. Put the onion in a deep bowl, pour over the vinegar and leave for 30 minutes. Then drain the vinegar, squeeze the onion.
  2. Wash beets, carrots and potatoes thoroughly, boil in their skins until tender. Cool, peel, grate on a coarse grater into separate containers.
  3. Disassemble the herring into fillets, cut into small pieces. Cover the cutting board with cling film so that the edges of the film hang from the board by 10 cm. Spread the grated beets evenly in a thin layer over the entire surface of the cutting board.
  4. It is good to press the beets to the surface of the board with your hands. Put a mayonnaise net on top and spread it with a fork. Put the grated carrots in the second layer. Also grease with mayonnaise.
  5. Put the grated potatoes in the third layer and also grease with mayonnaise. From above in the middle along the cutting board, lay out pieces of herring in a slide. Put pickled onions on top of the herring.
  6. Grab one hanging edge of the film and roll the vegetables with herring into a roll. Place the roll on a board in a film in the refrigerator for 1–2 hours. Then carefully unfold the film and transfer the salad to a dish.
  7. Serve garnished with egg, lemon and parsley. To prevent the roll from falling apart, mayonnaise can be mixed with dissolved gelatin.

4. Olivier with fish and scrambled eggs

For cooking you will need:
  • 4 large potatoes;
  • 1/2 can of canned green peas;
  • 4 eggs;
  • 2 fresh cucumbers;
  • 1 pickled cucumber;
  • 2 fillets of sea fish;
  • 2 onions;
  • salt to taste;
  • a pinch of sugar;
  • 1 teaspoon of lemon juice;

  7. Remove the roll from the refrigerator, remove the film and put it on the dish in which you plan to serve it. Gently grease with a layer of mayonnaise.
  8. Grate the baked beets on the smallest grater.

A small life hack: if in the process of sculpting a rooster you stained the plate with mayonnaise or other ingredients, then you need to wet a napkin or cotton swab and wipe it gently, and so that there are no streaks, wipe it with another napkin dipped in a weak solution of vinegar.
