If the jam is stored not in cool cellars, but, for example, in the pantry of a city apartment, the finished product should also be subjected to pasteurization. To do this, not yet sealed cans, but only covered with lids, are placed in a pan with hot water (about 70 degrees) and pasteurized for 9 to 15 minutes (depending on the volume of the can).

After pasteurization, the containers with the jam are removed, the lids are rolled up on them, and the jars are placed for natural cooling.

Chokeberry berries in syrup


Here is another recipe for chokeberry jam that housewives have been using for a long time - berries in syrup. In this case, not mountain ash is added to the syrup, but the opposite is true. Why the berries in the jam remain almost intact.

The sequence of cooking jam

  • Place a pot of jars on low heat. After boiling water in a saucepan, sterilize the jars for 20 minutes if they are half a liter, 30 minutes if they are liter, 15 minutes if their capacity is less than half a liter.
  • After removing the cans from the pan, roll them up. Leave to cool at room temperature.

Five-minute jam is healthier than usual, as it undergoes less heat treatment and retains more vitamins. However, at a high temperature in the room (above 18 degrees), such a delicacy is bad, it can deteriorate, so it is better to keep it in the refrigerator or basement.

Add cinnamon and citric acid at the end, stir. Transfer to glass jars, roll up the lids, store the cooled jam in the cellar or refrigerator.

Chokeberry jam with sugar syrup

Ingredients:

  • 1 kilogram of chokeberry;
  • 250 ml of water;
  • 1.3 kilograms of granulated sugar.

Preparation:

Rinse the rowan, remove the stalks, lethargic and spoiled berries. Boil water in a saucepan, pour chokeberry into it, blanch for 5-7 minutes, drain the liquid. Put a saucepan in which the jam will cook on a low heat, pour into it the water that has been drained from the mountain ash. Bring to a boil, add granulated sugar, mix thoroughly (sugar should completely dissolve). Black mountain ash and citrus jam

Ingredients:

1 kilogram of chokeberry;
300 ml of water;
2 kg of granulated sugar;
500 grams of apples;
2 medium-sized oranges;
1 lemon.

Preparation:

Rinse the berries, sort them out, put them in a saucepan, cover with cold water, boil over low heat for 10-15 minutes. Pour 1.5 kilograms of granulated sugar into a container, stir, boil for 5-7 minutes over low heat, remove from heat, let the mixture cool completely. Peel the apples, remove the seeds, cut into small wedges. When the future jam has completely cooled, put the chopped fruit in it, pour in the remaining sugar, stir, put on fire, boil for 10-12 minutes, let cool completely. Wash oranges and lemon, cut into pieces, mince. Transfer the citrus mass to a saucepan with mountain ash, mix, boil for 20 minutes over low heat. Then put it in sterilized jars, roll it up, wrap it up with a blanket, let it cool completely. Store in a cool, dark place. Add this jam to tea during a cold, the vitamin composition will help you cope with the disease faster and saturate the body with useful substances.

Chokeberry jam with cherry leaves

Ingredients:

  • 1 kilogram of mountain ash;
  • 100 grams of freshly picked cherry leaves;
  • 700 ml of water;
  • 1 kilogram of granulated sugar.

Preparation:

Rinse the cherry leaves, put half of them in a saucepan, cover with water, simmer for 5-7 minutes, drain the resulting liquid, let it cool. Rinse the berries, sort out, fill with the infusion of leaves for 8-10 hours. Pour rowan into the finished sweet syrup, boil until tender. Transfer the jam to prepared jars, roll up the lids, cool, store in a cool dark place.

Chokeberry jam with walnuts

Ingredients:

  • 600 grams of mountain ash;
  • 150 grams of walnuts;
  • 200 grams of apples;
  • 600 grams of sugar;
  • ½ lemon;
  • 1 liter of water.

Preparation:

Rinse the berries, sort out, cover with boiled water for one night. The next day, carefully drain the liquid, prepare a syrup from 200 ml of mountain ash infusion (add granulated sugar, boil for 5-10 minutes, remove from heat). Wash the apples, remove the peel, remove the seeds, cut into small cubes. Peel the citrus, cut into pieces. Crush the nuts with a rolling pin.

When all the ingredients are ready, put the saucepan or saucepan with syrup on the stove again, bring to a boil, put mountain ash, chopped nuts and apples in it. Everyone is accustomed to tasty, however, already slightly bored, strawberries, currants. What do you think about chokeberry jam? The berries of this plant have unique properties, they perfectly fight against viral diseases, strengthen the immune system.

Many people do not like the taste of this fresh berry because of its astringency and sourness, but one can hardly resist the alluring taste and aroma in the form of jam or jam. It is believed that the benefits of canned berries are completely lost, we hasten to answer that this is not so. Chokeberry is subjected to the most gentle heat treatment, especially if you decide to cook it in a slow cooker.

But there is another way to preserve the beneficial properties as much as possible - to cook raw chokeberry jam. Separate the berries (1 kg) from the twigs, rinse them well and blanch for one minute. Then dry the chokeberry and spin it through a meat grinder. Mix the finished mass with 0.7 kg of sugar and three grams of citric acid. On this, raw chokeberry jam can be placed in sterilized jars and stored in a cool place.

But with what problems blackberry jam will help you cope:

Do you want to please yourself but do not have the time and special desire to stand at the stove for a long time? Then this is your recipe. Despite the fact that the infusion of the jam takes about a day, the main cooking process will take only 15 minutes.

Ingredients for a five-minute recipe:

  • chokeberry berries - 1 kg;
  • sugar - 1 kg;
  • water - 500 ml.

We start with the preparation of the berries, carefully sort them out, remove the tails, scald with boiling water, and then rinse thoroughly under running water. For convenience, the berries can be transferred to a colander and let the remaining water drain completely. Then we transfer them to an aluminum or enamel basin and leave it for now, and in the meantime, we will prepare the syrup. Take a separate saucepan and mix the required amount of water and sugar in it. Boiling the mixture over low heat, wait for the boil, pour the berries with syrup and mix everything thoroughly.

Now we proceed to the main stage - cooking chokeberry. After the whole mass begins to boil, you must continue to cook the berries for exactly 5 minutes, then leave them to infuse for half a day. The next day, repeat the process in the same sequence - five minutes of cooking and infusion again for ten to twelve hours. When the moment comes for the third final process, prepare the sterilized jars. It remains to boil the present jam again for 5 minutes and roll it into jars.

You will say that the original name "five minutes" is debatable. However, most of the time should be spent on insistence, which you will not spend your own time and effort on. Such delicious chokeberry jam turns out to be truly rich and aromatic.

I would like to preserve the maximum amount of vitamins even in canned berries. Of course, achieving such a result with long heat treatment is quite problematic, but if you cook in a multicooker, you can reduce this problem to zero. And all thanks to the minimal heating of the berries when using the "Stew" mode. As a result, the jam is moderately thick, the astringency and astringent properties of the berries are lost, and their benefits, the original aroma and sweet taste are preserved.

Such preservation turns out to be moderately sugary, and to prepare it you will need:

  • blackberry - 1 kg;
  • sugar - 0.5 kg;
  • water - 0.5 l.

As always, we separate the berries from the branches, remove the tails and rinse them under running water. Then we shift the chokeberry into a deep basin and fill it with a liter of boiling water. In this state, we leave the berries to "rest" for 10 minutes. This is necessary so that the mountain ash becomes softer, which means that it absorbs sugar faster and lets the berry juice out. After the specified cooking time has expired, pour out half of the water, we will no longer need it, and pour the second 500 ml into a free container and leave it for cooking the jam.

We fill the prepared berries with the required amount of sugar and wait until they let the juice out. This will take at least an hour. Then we put the berries together with the juice into the multicooker bowl, add two glasses of water, which we left after soaking the mountain ash, and turn on the "Stew" mode for 40 minutes. With so many ingredients, the lid of the multicooker can be safely closed, the jam will not boil away. When the timer turns off, we take out the bowl from the multicooker, so the jam will cool down faster, lay it out in pre-sterilized jars and roll it up.

How else can you diversify blackberry jam? How about cherry leaf syrup? This recipe will be a real decoration for any canned sweets and will pleasantly surprise you. Write down the following list of required ingredients:

  • chokeberry - 2 kg;
  • sugar - 1.6 kg;
  • cherry leaves - 1 glass;
  • water - 1 l.

We carry out the processes already familiar to us with the berries: we carefully sort them out, rinse them several times and let the excess liquid drain, leaving for a while in a colander or sieve. In the meantime, let's tackle the cherry leaves. We also thoroughly rinse them under water, shake them off, pour them into an enamel pan and fill them with a liter of clean water so that it completely covers the leaves. We put on medium heat, bring everything to a boil and boil for another twenty minutes. The broth is ready, it must be filtered, and the leaves are thrown away.

We send the strained broth back to the fire and add sugar to it. We are waiting for the moment when the sugar turns into syrup and becomes homogeneous. When this happens, you can pour out the berries and cook them over low heat until boiling, and then leave for another 5 minutes and turn off the stove. Leave the mass to infuse for several hours, or better overnight, not forgetting to cover the pan with thick gauze. After that, bring the jam to a boil again and boil it for 5 minutes, leave it to infuse again for several hours, and then repeat the same thing again (as in the video).

At the end, boil the chokeberry jam for the last fourth time and, without waiting for it to cool, roll it up in prepared jars.

Jam with blackberries and apple slices will be a real pleasure during long winter tea drinking. Thanks to the addition of these fruits, the jam acquires the most delicate texture, a richer aroma, and its benefits for the body increase.

Ingredients for sweet preserves with chokeberry and apples:

  • chokeberry - 0.4 kg;
  • apples - 0.6 kg;
  • water - 0.5 l;
  • sugar - 1.5 kg.

Pour the berries sorted out and washed under water into a cooking container, fill them with water and let them boil for 15 minutes. After that, we transfer the chokeberry with a slotted spoon to a separate dish and turn off the stove for a while. In the meantime, take the apples, peel them and remove the core. As for the cutting method and thickness, it is advisable that you end up with slices of about 1 cm.Now we send the apples to a pot of water, where the berries were previously cooked, blanch them for 2-3 minutes and also transfer them to a separate container using a slotted spoon ...

Due to the high iron content in apples, they darken very quickly. To prevent this from happening, simply sprinkle them with lemon. Add sugar to the liquid remaining after cooking and boil everything over medium heat until a thick, homogeneous mass is obtained. Next, we send pre-blanched berries and apples into the ready-made syrup and act according to the familiar cooking scheme - cook after boiling for 5 minutes and leave the jam to infuse for 3-4 hours. So we repeat 4 times.

This cooking method helps the berries to become soft, but not boiled, while maintaining their original structure. Now there are little things left - roll up delicious jam in clean sterilized jars and wait for the pleasant moment of the long-awaited winter tea party.

Citruses will help get rid of the tart aftertaste of black chokeberry berries. They will give the jam an unrivaled aroma, but retain the flavor of the berries. This refreshing mix will be especially indispensable in the morning with French toast and tea. Hypertensive patients will like it.

  • orange - 1 pc.;
  • lemon - 1 pc.

Scroll citrus peels and berries through a meat grinder. Transfer the resulting mass with orange, lemon and chokeberry into an enamel pan and fill it with sugar. Mix the ingredients thoroughly and leave them alone. We are waiting for the jam to boil, and then we make the minimum heat and set the timer for 40-45 minutes.
