Recipe 2, step by step: lush brushwood on kefir

To please loved ones with delicious pastries, it is not necessary to devote a lot of free time to this. Lush brushwood on kefir can be made in just one hour according to our recipe with step by step photos. Kissel from fresh or frozen fruits, compote, milk or cocktail - choose a drink according to your taste, everything will be appropriate.

For the dough, kefir of any fat content is suitable, even if it has been slightly pranced. Vegetable oil needs refined or deodorized, without a pronounced odor. Purchase flour from trusted manufacturers. The floated dough mass will not make good baked goods. The amount of sugar in the recipe is minimal, since the finished products must be sprinkled with powdered sugar. It is divinely delicious and beautiful.

  • kefir - 1.5 cups;
  • table salt - ½ teaspoon;
  • chicken egg - 1 piece;
  • wheat flour - 3 cups;
  • fine crystalline granulated sugar - 3 tablespoons;
  • baking soda - ½ teaspoon;
  • vegetable oil - 2 tablespoons.

Pour kefir into a convenient bowl and add baking soda. Stir and let sit for 5 minutes. As soon as foamy bubbles appear on the surface, add salt and sugar. Release the egg, pour in the oil.

Stir the mixture and gradually add the sifted premium flour.

When it becomes difficult to stir with a spoon, put the mass on a board and knead a tender dough. Form a ball, transfer it back to the bowl and cover with a napkin.

Let it stand for a quarter of an hour. After the expiration of the time, divide the dough piece in half and roll each piece into a layer 1 centimeter thick.

Cut each half with longitudinal stripes and then with transverse strips to get rectangles of the desired size. Use a sharp knife to make notches in the center of each piece. Spread the hole and pull the tip of one side through it.

Fry in a bowl with heated sunflower oil.

Place the rosy brushwood on a plate with a paper towel to remove excess grease. Transfer the cooled products to a tray or dish and sprinkle with snow-white powdered sugar. Serve with your favorite drinks. Bon Appetit.

Beat eggs a little. Add sugar, stir.

Add salt, soda, milk, vodka, vegetable oil. Mix.

Sift flour.

Introduce gradually into the dough.

Knead an elastic, soft dough. The dough should not stick to your hands. For convenience, I divided it into 2 parts (it is more convenient to knead this way). Let the dough rest for at least half an hour.

Roll. The thinner the better. But, so that you can pick it up and it does not fall apart.

Cut into strips.

Then cut the strips into 2-3 more pieces.

In each strip we make an incision in the middle. And we fold this way.

Here's what happens.

Deep-fry. On both sides. Better to fry in small portions.

Put the finished brushwood on a napkin and sprinkle with powdered sugar. Enjoy your tea!

Recipe 4: fluffy soft brushwood in milk

Delicate soft brushwood on milk is familiar to us from childhood. Our grandmothers and mothers often pampered us with this delicious delicacy. It's time to pamper our kids with such a simple and very tasty dessert at the same time. Moreover, brushwood is prepared from readily available ingredients, milk, vegetable oil, yeast and flour.

  • Milk - 1 l
  • Vegetable oil - 6 tbsp. l.
  • Yeast - 100 g
  • Sugar to taste - 100-150 g
  • Salt - 1 pinch
  • Powdered sugar - 100-150 g
  • Vanilla sugar - 1 sachet
  • Vegetable oil for frying

This recipe uses 1 liter of milk. This is a large portion. My family is not small, for me this is what I need. And you can safely divide all the ingredients in half.

Pour the warmed milk into a bowl until it reaches room temperature.

We put the yeast and dilute them well in milk.

Then pour in vegetable oil and add vanilla and regular sugar to taste. I poured about 100 g of sugar into 1 liter of milk. I think it's not necessary anymore, as after baking the brushwood we will sprinkle it with powdered sugar.

After the mass has been well stirred, we begin to pour in the sifted flour a little.

We knead the fluffy elastic thick yeast dough and put it in a warm place so that it doubles or even triples in volume.

After the dough has come, we divide it into small parts, transfer it to the table and roll it into a layer 0.5 centimeters thick.

Cut out diamonds from the dough,

in the middle we make a small incision with a knife and pull one end of the dough through the incision.

Dough figurines are ready.

Now we take a deep frying pan or stewpan, pour in the vegetable oil, bring it to a boil and carefully lower the yeast dough figures.

Fry soft brushwood in milk in vegetable oil on both sides until golden brown.

Then we take it out on a paper towel to drain the remaining vegetable oil.

While still warm, sprinkle the brushwood in milk with powdered sugar and serve.

That's all the delicious, fragrant soft brushwood in milk is ready.

Recipe 5: lush brushwood from sour cream dough

  • flour 400-450 g
  • chicken egg 2 pcs.
  • sour cream of any fat content 150-170 g
  • granulated sugar 90-120 g
  • a pinch of salt
  • soda 1/3 tsp
  • icing sugar 50-75 g
  • vegetable refined oil (deodorized) 200-300 ml

Break 2 eggs into a deep bowl, add 90-120 g of sugar.

Add a pinch of salt and 1/3 teaspoon of soda and 150-170 g of sour cream to the prepared mixture, mix everything well, evenly distributing the soda so that it gives the maximum fluffing effect.

Now, gradually, in small portions, 2-3 tablespoons each, add pre-sifted flour into the mixture. Each time, carefully mix in the dry ingredient, making sure that all the lumps dissolve.

When it becomes difficult to stir the dough with a whisk, sprinkle flour on the table and spread the dough on it. Sprinkle with flour on top and begin to knead with your hands, gradually adding flour a little more. As a result, we should have a fairly cool dough that does not stick to our hands at all. At this stage, we will use up about 400 g of flour. The rest will come in handy while rolling out the brushwood. We collect the dough in a tight ball, wrap it in cling film. If there is no one in the house, you can take a bowl, lightly wipe it with flour and put the dough in it, covered with a lid on top or with a regular disposable bag. We send the dough for proofing in the refrigerator, for 15-20 minutes.

After 15-20 minutes, take the dough out of the refrigerator and put it on a floured table. We divide it into three parts with a knife. We roll out the first part into a thin layer.

It should be borne in mind that the thinner you roll out the dough, the thinner and crisper the brushwood will turn out. But if you want a crispy product with a soft center, you can leave it about 5 mm thick.

Cut the rolled dough into strips approximately 3 cm wide. Cut each strip across and slightly obliquely so that we get figures resembling diamonds.

In the middle of each diamond we make a longitudinal cut.

Now the most interesting thing: we will twist the curly brushwood. To do this, we pass one end of each rhombus into the resulting hole and pull it out, giving it the shape of a beautiful, long, delicately twisted figure. Put the finished blanks on a tray sprinkled with flour or a large cutting board. You can put the figures tightly enough, since our dough is steep and they should not stick together. When all the "twigs" are twisted, we repeat all the manipulations with the other two parts of the dough.

We take a thick-walled saucepan or deep frying pan. Pour 200-250 ml of vegetable oil into it (the container should be filled by about 1-1.5 cm in height). As you spend it, you may have to add it. In this case, do this when there are no brushwood in the pan, and do not forget to wait until the oil diluted with cold heats up again.

Put a saucepan (or frying pan) on the stove, turn on medium heat and let the oil heat up well. With dry hands, put the prepared brushwood in small portions in hot oil. It immediately starts to sizzle as it grills. Having lowered a dozen blanks, we immediately turn them over, starting with the first, so that the second side is also well fried.

The brushwood is prepared very quickly, therefore, as soon as you turn the last curl, the first ones should already acquire a golden color, indicating readiness. This means that you can immediately take them out of the pan. To do this, we use a slotted spoon: lift the finished brushwood out of the oil, hold it over the pan for a few seconds, letting the oil drain a little, then put the finished product on paper towels so that the excess oil is absorbed into them.

Transfer the ready-made brushwood and dried from oil to a dish and sprinkle with powdered sugar. It is better to do this through a strainer, then the powder will fall on the delicacy more evenly. For everything we will use about 50-75 g of powder. Since everyone in my family has a sweet tooth, I sprinkle the powder generously, so that it lays down in a dense layer. But, given that our dough is already sweet, you can not be zealous if you do not like too sugary sweets.

Well, our delicacy is ready, and you can serve it on the table. Crunch to your health!

Recipe 6: lush brushwood cooked in milk

A very quick, simple classic step-by-step recipe with a photo of delicious ruddy brushwood in milk. It will take less than half an hour to fry a pile of mouth-watering curls. The dough is prepared in milk without baking powder and soda; for splendor, vodka or other strong alcohol is added to it. If you don't keep vodka in the house, add diluted alcohol. If this option is unacceptable for you, add baking powder or soda quenched with vinegar to the dough together with flour.

  • flour - 200 gr.;
  • egg - 1 pc.;
  • milk - a third of a glass;
  • vodka - 1 tablespoon;
  • sugar - 1-2 tablespoons (taste);
  • salt - a pinch;
  • icing sugar - 3-4 tablespoons (for filing);
  • vegetable oil - for frying.

We break the egg into a deep container. Pour in one or two tablespoons of sugar, a pinch of salt and pour in milk. Cold or warm - no difference.

Beat in a homogeneous mixture with foam bubbles. Add a spoonful of vodka or rum, brandy, alcohol diluted with water.

Sift flour in parts, mixing with liquid ingredients. When the mass becomes dense, put it on the table and mix with your hands.

Knead the dough until it becomes soft, smooth, do not make it dense. The dough should easily come off the table or the walls of the dishes and not stick to your hands. We cover, leave to rest for five to ten minutes.

Roll out the dough with a rolling pin into a rectangular layer with a thickness of 2-3mm. When rolling, lightly dust with flour.

Cut with a knife into strips 3-4 cm wide. We cut each strip into pieces of 5-6 cm. Rectangular blanks are obtained. In the middle we make a small incision.

We bend one edge, pass it into the incision. We stretch it down, as if wrapping it. We straighten the edges and also prepare the rest of the blanks.

Pour vegetable oil into a cauldron, a frying pan, use only refined oil for frying. We lower several blanks, fry one side over medium heat.

Pry off with a slotted spoon, turn over. The second side browns very quickly, in just a few seconds. We catch the ready-made brushwood, send the next portion to the oil.

Place the brushwood on a paper towel. When the excess oil is absorbed, transfer to a plate, sprinkle with powdered sugar and serve with tea. Bon Appetit!

Lush brushwood on kefir during the Soviet total shortage was one of the few affordable and popular desserts. It was baked or, more precisely, fried for breakfast or tea. Unlike brushwood on milk, which was rolled out very thinly and made crispy, brushwood on kefir turns out to be soft and fluffy. Instead of kefir, you can use any similar fermented milk product, for example, yogurt, sour milk, yogurt.

Ingredients

  • kefir 100 ml
  • egg 1 pc.
  • granulated sugar 3 tbsp. l.
  • salt 0.5 tsp
  • soda 0.5 tsp.
  • flour 2.5-3 tbsp.

How to cook lush brushwood on kefir

In this recipe, the brushwood turns out to be lush thanks to the kefir and soda included in its composition. They react to release carbon dioxide. This creates bubbles. In the finished dough, they are not visible, but when heated, carbon dioxide reactivates. Newly appearing bubbles form voids in the brushwood. As a result, the dough swells and rises. The brushwood on kefir turns out to be lush.

  1. Mix kefir and soda in a separate container. Leave on for 1 minute until a rich foam forms.

  2. Meanwhile, stir in egg, sugar and salt.

  3. You do not need to whip them into foam. It is enough to stir them with a whisk or fork until smooth, so that the yolk combines with the protein, and the granulated sugar dissolves.

  4. Pour the foamed kefir into the egg mixture and mix. The number of bubbles will decrease, but they will not disappear completely.

  5. Gradually introduce sifted flour. Its amount depends on the properties of a particular variety.

  6. The dough should be soft but not sticky. If there is a lot of flour, then the brushwood will turn out to be rubber and will not rise. If the dough remains sticky, it will not be able to form a cookie.

  7. Sprinkle flour on the table and roll out a cake 5-6 mm thick on it. The dough top and rolling pin should also be generously dusted with flour.

  8. Cut the cake into strips about 4 cm wide. Then divide them obliquely into diamonds. The length of each piece should be approximately 5-6 cm.

  9. Make a small cut in the center of each.

  10. Pull one edge of the diamond through the center hole. Spread the brushwood. Be sure to shake off the excess flour, otherwise it will start to burn when frying.

  11. Heat vegetable oil in a deep frying pan or deep fryer. Gently place a few pieces of dough in it. They shouldn't touch. It should be remembered that when heated, the brushwood increases significantly in size.

  12. It needs to be browned first on one side, and then on the other.

  13. Lush brushwood on kefir should be laid out on a paper towel to remove excess fat.
  14. Then it can be sprinkled with icing sugar and served.

If it sticks, add a spoonful of flour until you achieve the desired consistency. Knead the dough vigorously with your hands for a few minutes (3-5). Then put in the refrigerator to "rest", wrapping it with cling film.

Roll out the dough, "cooled" for 30-60 minutes. Cut into strips and shape into brushwood. Turn on the oven to warm it up to 180 degrees. Place the pieces on a baking sheet lined with baking paper. Bake for about 10-15 minutes until pleasant golden brown. It remains only to sprinkle with icing sugar and take a sample.

Enjoy your tea!
