Ingredients:

  • 300 ml strong tea (preferably Earl Gray),
  • 3 tablespoons vegetable oil,
  • 2.5 cups flour,
  • 1/2 teaspoon salt,
  • 3/4 cup walnuts,
  • 1 teaspoon baking powder,
  • 1/3 teaspoon of soda.

For filling:

  • 2 bananas
  • 3 oranges,
  • 10 pieces of dried apricots,
  • 2 teaspoons agar-agar,
  • about a glass of walnuts for decoration.

Preparation:

1. Turn on the oven to 180 degrees.

2. Prepare the dough. Place banana, sugar, honey, vegetable oil, and half the flour in a blender. Add pre-brewed, lukewarm bergamot tea. Whisk.

Mix the rest of the flour with baking soda, baking powder and salt. Add to the blender bowl. Rub everything until smooth. Stir in nuts.

3. Divide the dough into two halves and place in two small molds (20-23 cm), the bottom of which is previously covered with baking paper greased with vegetable oil.

  • 100 g raisins;
  • 60 g walnuts;
  • baking powder (2 tsp)

Ingredients for cream:

  • 4 tsp. lingonberry jam (or sugar to taste);
  • 300-500 g lingonberries;
  • semolina (1 tbsp).

You will also need apricot jam, one orange and one kiwi. So, soak the raisins in boiling water for a couple of minutes, drain the water, and dry. Chop the nuts, not very finely. Sift the flour into the bowl with the spices.

In the bowl in which you will knead the dough, remove the zest from one orange. Then squeeze the juice of two oranges. Now add mineral water and baking powder. Stir. Lightly beat the sunflower oil and sugar. Add to liquid ingredients and stir. Next, stir in the nuts and raisins. Now gradually add flour and knead the dough.

Spread the dough evenly onto the pan (it should be approximately 21cm across). There is no need to lubricate the mold with anything. Bake the crust in a preheated oven for about an hour. First bake at 180°C and increase the heat 10 minutes before completion. Cool the finished crust on a wire rack.

  • one package of cream (dry, purchased);
  • three pinches of coconut flakes;
  • one glass of blackberries;
  • one glass of cherries (pitted);
  • soda (1 tsp);

  • one glass of walnuts;
  • half a glass of sunflower oil;
  • 1.5 glasses of water (boiled, warm);
  • honey (3 tbsp);
  • one glass of brown sugar;
  • two glasses of wheat flour.

  • Vanillin.

For cream:

  • Cherry syrup or juice – 400 ml.
  • Semolina – 2 tbsp. l.
  • Lemon juice optional.
  • Cherry.

How to make Lenten cake:

At the very beginning, we take the cherries in syrup, place them on a sieve, and press the berries a little so that the syrup drains well. I use canned cherries, in which the syrup is very concentrated, so during the cooking process I will dilute it with water to the required volume. But you can take absolutely any cherry and replace the syrup with ready-made juice. For example, defrost frozen berries, put them in a strainer, and strain. You can also dilute the resulting juice with water, but not too much; there should be a cherry note in the cake. Trust your taste; in the future, when preparing such a Lenten cake, you will understand what concentration the juice should be.


So, first we cook the cream, so as not to wait until it cools down. Pour cherry syrup into a saucepan, put on fire, add sugar if necessary. Try it and make it to your liking. The liquid boils, pour in the semolina little by little so that it doesn’t form lumps, stir constantly. Cook until the cereal is ready for about ten minutes. The liquid thickened and became like jelly. Be sure to taste for sweetness and decide whether to add sugar or not. It turned out too sweet, also add squeezed lemon juice to your taste, but if the cherry juice is already sour, this is not necessary. Cover the pan with a lid and set aside to cool to room temperature.


Now, let's do the dough. In a separate container, mix flour, sugar, baking powder, cocoa, vanillin. The amount of sugar depends on the sweetness of the juice you use. I don't add it at all, my syrup is quite sweet anyway. Mix the syrup with the butter, add to the flour mixture, and stir well. The dough will turn out runny, don’t worry, that’s how it should be. Cover the bottom of the mold (diameter 21 cm) with baking paper, grease with oil, and pour the dough into it. Place in a preheated oven at 180°C and bake for 45 minutes.


Now let’s get to the fun part, whipping the cream. When I prepared such a Lenten cake for the first time, for me, I think, like you now, this process was mysterious. How can ordinary cherry semolina porridge turn into airy cream? It turned out to be very simple. So let's see this magic. The cream has cooled down, look how thick it has become. Beat it in with a mixer for just a few minutes. That's all!


Look how it turned white, increased in volume, became thick and airy. Incredibly, the cream became similar to whipped whites and acquired, one might say, a marshmallow taste with a fruity note.


The baking time has passed, take out the cake and check for doneness with a thin wooden stick (toothpick). We insert it in the middle of the cake, then take it out, it is dry and clean, which means our sponge cake is ready. Without removing their shape, leave them until they cool completely, then carefully remove them. Cut off the top and set it aside; we will need it later. We cut the rest of the sponge cake into two layers, look how tender and soft the sponge cake turned out without eggs - just a miracle. Well, now, put the bottom cake on a dish, install a culinary ring, or a ring of the mold in which it was baked, but you can form it without it.


Place about half of the cream on the cake, level it, spread the cherries on top, cover with another cake layer, and apply the cream again, leaving a little for coating the sides. Place the cake in the refrigerator for half an hour. Grind the part of the biscuit that was cut into crumbs with a blender. After 30 minutes, take out the cake, carefully remove it from the mold, coat the sides with the remaining cream, sprinkle biscuit crumbs on top and sides, then put it in the refrigerator for several hours. But if you really can’t wait to try the chocolate-cherry Lenten cake with airy cream, as I did, then cut off a piece, put it on a plate, and try it with pleasure, I assure you it’s very tasty even without soaking.

Not everyone thinks it is possible to bake such a culinary masterpiece as a Lenten cake! How could this be? Preparing the dough for the crust

Take it out, stir coconut milk (50 ml) and 50 grams of brown sugar into the hot melted chocolate.

Soak one half of the cake with apricot jam syrup. Grease half of the cake with cream. Cover with the other half of the cake. If there is any cream left, spread it on top of the cake. If all the cream has gone into the first cake layer, brush the top of the cake layer with apricot syrup. Decorate the cake with almond petals and fresh berries on top.

Lean custard cream for cake

A very simple custard that will be the most delicate mousse addition to almost any cake. To prepare this cream, fry wheat flour (two heaped tablespoons) in a dry frying pan until golden brown.
