  1. The base is best mixed with fresh meat rather than thawed.
  2. It is important not to shift the ingredients (cereals, onions, eggs), otherwise the mass will fall apart.

Minced hedgehogs with rice in sour cream sauce, or simply meatballs, is a fairly common dish, loved by many for its taste and ease of preparation. Hedgehogs can be served as an independent dish, or with a side dish, for example, with mashed potatoes, rice or buckwheat.

Despite the common name, each housewife prepares hedgehogs a little differently. So I offer you my own version of cooking minced meat hedgehogs with rice in sour cream sauce.

Ingredients: (for 11-12 hedgehogs)

for minced meat

  • 600 g meat (halved pork and beef)
  • 1/2 cup rice (100 g)
  • 1 egg
  • 1 large onion (150 g)
  • 1 carrot (150 g)
  • 1-2 cloves of garlic
  • dry seasonings to taste
  • salt pepper
  • vegetable oil for frying
  • some parsley

for sauce

  • 200 g sour cream 15-20% fat
  • 1 tbsp. l. tomato paste or 2 fresh tomatoes
  • 2 cloves of garlic
  • 1 tbsp. l. flour without a slide
  • 1/2 cup hot water

You can take any meat for hedgehogs, but I prefer to cook minced pork with beef, it seems to me the most delicious. I do not advise taking minced meat. Firstly, it cannot be compared in taste with homemade, and, secondly, it is not known what was put into it. So do not be lazy, cook the minced meat yourself, your efforts will be rewarded with excellent taste.

Preparation:

First, boil the rice in salted water until half cooked, that is, after boiling, let it cook for 7-8 minutes. Instead of salt, I chop a chicken bouillon cube into water. Then we drain the water through a colander.

Along with the meat, you can scroll peeled onions and carrots, but I like it better if the vegetables are fried a little beforehand.

So, finely chop the onion and fry in vegetable oil until soft, until the onion just starts to turn golden.

Three carrots on a fine grater, add to the onion and continue to fry, stirring occasionally, until the carrots are soft.

In a cup, mix minced meat, rice, onions with carrots, a beaten egg and 1-2 cloves of garlic passed through a press. Salt and pepper to taste and add any dry herbs you like.

We mix all the ingredients and get this minced meat:

Now we roll up round hedgehog meatballs with a diameter of about 5 cm with our hands and put them in a saucepan or deep frying pan. From this amount of products, 11-12 hedgehogs are obtained.

Pour hot water from a kettle up to about half the meatballs, salt to taste, cover with a lid, bring to a boil and simmer over low heat for about 30 minutes.

In the meantime, the hedgehogs are stewing, prepare sour cream sauce. To do this, add 1 tbsp to sour cream. l. tomato paste or 2 grated peeled tomatoes and 2 minced garlic cloves.

Mix, add salt to taste, 1 tbsp. l. flour without a slide and mix well again so that there are no lumps.

Add 1/2 cup hot water from the kettle and stir until smooth. The sauce is ready.

When the hedgehogs are stewed in water for half an hour, add sour cream sauce to the pan.

Quite recently, a new word “meetball” has appeared on hearing, for some reason these meat balls won the hearts of many.   • garlic - 2 cloves
  • onion - 1 pc.
  • salt and sugar - 2 pinches each

Heat the oil, simmer the grated onion on it, add pepper and chopped garlic after a couple of minutes. After another 2 minutes, pour in the wine and add the chopped tomatoes. When the mass boils, pour in the broth, season with salt, sugar, oregano and basil. Simmer for 3 minutes and after this time we throw hedgehogs into the boiling sauce. This gravy will suit those for whom it is an integral part.

Tomato-garlic sauce for hedgehogs

Components:

  • olive oil - 15 ml
  • garlic - 4 cloves
  • cayenne pepper - 1 tsp spoon
  • tomato juice - 300 ml
  • wine white vinegar - 1 table. spoon
  • nutmeg, salt, black pepper - 3-5 g each

Throw chopped garlic and cayenne pepper into hot olive oil, heat for a minute until an appetizing garlic aroma appears. Then pour in tomato juice and cook until thickened. When we reach the desired consistency, add vinegar, white wine or, in the absence of - ordinary, pour hedgehogs with it and simmer.

Aromatic tomato sauce with herbs

Having learned how to cook this great sauce, you can noticeably improve not only the taste of hedgehogs and meatballs, but also other dishes made from meat, potatoes and vegetables.

Take:

  • tomato paste - 50 g
  • soy sauce - 3 tbsp. spoons
  • vegetable oil - 2 tablespoons. spoons
  • garlic - 3 cloves
  • coriander - 0.5 teaspoon spoons
  • basil - 5 g
  • tomatoes - 5 pcs.
  • ground laurel leaf - 2 pinches
  • pepper and salt to taste

Fry finely chopped garlic in oil, mix the tomato paste with soy sauce and all the listed spices. We send this mixture to the pan to the garlic, simmer for several minutes. Then add the tomato slices and bring the sauce to a boil. We throw meat balls into it and simmer until tender.

Original curry hedgehog sauce

This unusual Asian-style sauce will completely change your attitude towards such an ordinary dish as hedgehogs.

Required products:

Fry curry paste in vegetable oil, heat for a couple of minutes. Then pour in coconut milk and peanut butter, simmer over low heat for 2 minutes. Then pour in the soy sauce, brown sugar and all of the listed spices, as well as the Worcestershire sauce. Pour the sauce over the ready-made hedgehogs and decorate with a chopped green onion. By the way, ingredients that are unusual for us can be easily replaced. For example, instead of coconut milk, we take the usual Worcestershire sauce - soy sauce with the addition of hot red pepper.

Creamy cheese sauce for hedgehogs

Ingredients:

  • fat cream - 150 ml
  • sour cream - 100 g
  • cheese - 150 g
  • garlic - 2 cloves
