For the festive table, I propose to prepare a delicious snack cake with salmon. It is prepared very quickly and easily, does not require time for impregnation, the taste is amazing, but in appearance it is so beautiful and appetizing that it is difficult to resist the temptation and not bite off at least a piece. So, I am sharing my author's recipe for salmon pancake cake.

(1 pancake cake with salmon)

  • 8 pancakes
  • 300-400 gr. lightly salted salmon
  • 600 gr. soft cream cheese
  • 1 clove of garlic
  • 1 tbsp sour cream
  • small bunch of dill
  • small bunch of parsley
  • 1 tsp red caviar for decoration
  • To prepare this appetizer, we need three main ingredients: pancakes, lightly salted salmon (trout) and cream cheese. We bake thick pancakes, yeast or kefir are ideal (following the links, you can see step-by-step pancake recipes).

  • Salmon is best salted at home. The fish turns out to be tasty, elastic and much cheaper for money than purchased. See the recipe here.
  • Cut the salted salmon into thin slices. We leave the most beautiful pieces for decorating the cake, the rest for the filling - we will have two layers of salmon. By the way, we don't eat small and ugly scraps, but put them aside, we need them according to the recipe.

  • We buy cream cheese like Philadelphia or mascarpone. It is not at all necessary to buy expensive brands, any locally produced soft cream cheese will do, it is important that the cheese is not too salty.
  • If the cheese is dense in texture, then to soften a little, you can add one tablespoon of sour cream. Putting is no longer desirable, otherwise the pancakes in the cake will disperse, which is not very good, because the cake must be whole.
  • Divide the cheese into three parts. We leave one part as it is. Grind the second part (200 gr. Cheese) in a blender along with small and ugly pieces of salted salmon. We will get a very delicate and tasty light pink paste, which we use for the filling.

  • Mix the third part of the cheese with finely chopped dill and crushed garlic clove. We put a little dill so that it only complements, and does not interrupt the taste and aroma of salmon. By the way, you can buy ready-made cream cheese with herbs, which is very convenient, especially when time is short.

  • So, the salmon is cut, three cheeses are ready, you can start assembling our pancake cake. I must say right away that the order of the layers does not really matter, so here you can act at your discretion.
  • So, we put the thickest pancake on the bottom, grease it with that pink paste that we made from cheese and salmon scraps. We make the layer not very thin, at least 3-4 mm.

  • We put the second pancake. Spread the pancake with cheese paste with herbs. The layer is also plump.

  • We put the third pancake. Lubricate it with white cheese. Here the layer can be made thinner, since it is only a connecting element. We spread the pieces of lightly salted salmon. Ideal when there is a lot of salmon and little "empty space".

  • An important point! Be sure to coat the salmon slices with cheese on top, since the fish itself will not stick to the pancake. And we need the cake to be whole.

  • We put the fourth pancake. Spread the cheese paste with salmon.

  • Fifth pancake - spread a layer of cheese with herbs.

  • The sixth pancake is a thin layer of white cheese, on which we again put pieces of salmon. Do not forget to grease the fish with cheese on top.

  • And so on. We make the number of layers in the cake depending on the desired height of the cake and the prepared products. The last pancake, which will be the top of the cake, is coated with cheese (white or green, whichever remains). We coat the edges with cheese.

  • Salmon pancake cake looks luxurious, very beautiful and very expensive when the whole cake, both on top and on the sides, is covered with salmon. But not everyone can afford such a luxury, yes, in general, this is not necessary, so I propose to make a more democratic design.

  • Sprinkle the sides of the pancake cake with finely chopped parsley, decorate the top with slices of salmon, parsley leaves and red caviar. That's it, our pancake and salmon snack cake is ready! This cake can be served almost immediately.

To make the pancakes come out lush, and not dense, like the sole, add slaked soda to the dough. (Hint for beginners: put ½ teaspoon of baking soda in a tablespoon and pour in a little vinegar. Hold the spoon with baking soda over the dough: the baking soda will fizzle and run out of the spoon into the dough).

Mix the dough quickly, add a tablespoon of vegetable oil to it (this will prevent the pancakes from sticking to the pan), bake the pancakes and put them in a slide on a plate.

Ingredients:

For cakes:

  • wheat flour - 250 grams
  • chilled sour cream - 120 grams. You can take sour cream of any fat content
  • chilled butter - 120 grams
  • salt - half a teaspoon
  • baking powder - one teaspoon
  • drinking soda - one pinch
  • sugar - one tablespoon

For filling:

  • cold smoked salmon - 300 grams. Can be replaced with any salted, lightly salted red fish
  • green onions - a few feathers
  • curd cheese - 300 grams

To prepare the dough, add salt, sugar, baking soda and baking powder to the flour. Mix everything thoroughly. Pour flour into a large enough bowl.

Cut the butter into pieces and put in flour. First, stir with a tablespoon, and then grind into crumbs with your hands. The crumb should not be very small.

Then add sour cream to the crumb and quickly knead the dough. Divide the dough into eight equal portions. Round each piece. Put all the pieces on a dish, cover with cling film and put in the refrigerator for half an hour.

After the specified time has elapsed, remove the dough from the refrigerator. Cut off baking paper. Sprinkle flour on it. Roll out a piece of dough on paper into a thin round layer. Cut off the circle with a cap or ring. Leave the scraps on the paper. Chop the dough with a fork. Send to an oven preheated to 210 degrees for about three to four minutes. The finished crust is pleasantly golden in color.

Separate the cuttings and place them in a separate container. Cool the cake on the desktop. Bake all eight cakes in the same way. The paper can be reused.

To prepare the filling, put the curd cheese in a bowl. Chop the herbs and put in the cheese. Mix.

Cut the fish into strips, and then cut each strip into small pieces.

Put all the cakes on the desktop and distribute the curd cheese between them. Smear it on the cake with a knife. Leave one tablespoon of curd cheese to coat the side of the cake.

Put the pieces of fish on the curd cheese. Place the cakes on top of each other.

Smear the top cake with cottage cheese, but do not steal fish on it. Spread the remaining cheese on the sides of the snack cake.

Grind the crumbs from the cakes into crumbs. Sprinkle the sides of the snack cake with prepared crumbs.

You can decorate the cake with caviar sauce and herbs. But you can come up with your own version.

1 egg + 0.5 teaspoon salt + 1.5 teaspoons sugar = whisk until smooth. Flour 100 g (2.5 tablespoons with a large slide) - sift through a sieve and pour into the dough, start stirring and immediately pour in 125 ml milk - in a thin stream, stir + 125 ml water + 1 tablespoon sesame. I mix - until smooth. If you make the dough in this sequence, then there is no lump. The pancake dough turns out to be of medium thickness - like a very liquid sour cream.


I send butter 30 g to the microwave until it is liquid. I pour it into the dough in a thin stream - with continuous stirring. It is the melted butter that will add delicacy to the pancakes.


The pancake dough is ready.

Thin pancakes - preparation:

I pour vegetable oil (1-2 tablespoons) into a plate + a brush (or I prick a piece of bacon or potatoes on a fork - this is what our grandmothers did) - to grease the pan for pancakes.

I put the pan on the fire and heat it + grease it with a thin layer of vegetable oil + 1 ladle of dough and quickly distribute it in a thin layer over the pan. I fry until golden brown, turn over to the other side, with the help of a miracle spatula, also until golden brown. I put the finished pancake on a plate, do not grease it with anything. I fry all the dough using this scheme.

Cream cheese:

Cream 100 ml fat from 30%, cold - beat with a mixer until the state of "shaving foam"

Philadelphia cheese 175 g knead with a fork + dill (3 finely chopped sprigs) + cream + salt, pepper to taste.

To decorate the cake:

I cut cherry tomatoes 100 g into 4 parts + finely chop the green onions (2 - 3 feathers) + vegetable oil, salt, pepper - to taste, mix.

Pancake cake with salmon:

You can make one big cake, but I make several small ones, or rather 4 pieces.

To do this, I cut out 3 identical small circles from each ready-made pancake - using a glass. For 1 cake I use 5 small circles.

In the middle of the first pancake 1 heaped teaspoon of cream cheese, cover with 2 pancakes + 1 teaspoon salmon, cover 3 with pancakes + 1 teaspoon with a slide of cream cheese, cover with 4 pancakes + 1 teaspoon salmon, cover with 5 pancakes + a few tomatoes with green onions and ½ a lemon circle.


Step 1: prepare the cream.

Remove the sour cream and cream cheese from the refrigerator ahead of time to warm up to room temperature. Put them in one plate and mash the cheese, mixing it with sour cream until smooth, creamy in consistency.

Step 2: prepare the salmon.



From fish, we only need fillets without skin, you can either buy it ready-made, or peel everything off yourself. After cleaning, the fillets of salted or smoked salmon will need to be cut into thin strips or small cubes.

Step 3: collect the salmon pancake cake.



Collecting pancake cake with salmon is as easy as shelling pears. First, lay the first pancake, coat with cheese cream and sprinkle with chopped dill. Then cover everything on top with a second pancake and lay out the fish pieces. Put the third pancake on top, brush it with cheese, add greens, and then cover with the fourth pancake and repeat all the same layers from the beginning. And so on, until a delicious pancake cake grows in front of you. Decorate it with red caviar on top and serve it to the festive table!
