Chicken with canned beans is a very beautiful and appetizing quick dish. Juicy pieces of chicken fillet go well with tender canned beans. Beans can be taken either in their own juice or in tomato. If you use beans in tomato, then you do not need to add additional tomato.

Compound:

  • Chicken fillet – 800 g
  • Canned beans (in tomato or in their own juice) – 1 can (400 g)
  • Tomatoes in their own juice (can be replaced with fresh tomatoes) – 1 can (400g)
  • Onion – 1 pc.
  • Dried herbs (I used a mixture of Italian herbs) - to taste
  • Ground black pepper - to taste
  • Salt - to taste

Preparation:

Rinse the chicken fillet thoroughly, remove any remaining films and fat. Cut the chicken into medium sized cubes.

Peel the onion and also cut into cubes. The smaller the better. Heat a little odorless vegetable oil in a frying pan and fry the onion in it, stirring occasionally, for 10 minutes. The onion should become soft and slightly browned.

When the onions are fried, turn up the heat to maximum and add the chicken to it. Fry the chicken over high heat, stirring constantly, until it turns white, then reduce the heat. This way the chicken will retain its juiciness.

Next, add the tomatoes in their own juice to the chicken and add a little boiled water, about half a glass. If you use fresh tomatoes, first peel them and cut them into cubes.

Cover the chicken and simmer over low heat for 10-15 minutes. Do not overcook the chicken on the stove or it will become tough. 5 minutes before the end of cooking, place the canned beans in the pan. If you are using beans in tomato sauce, simmer the chicken with water first and add the beans at the end.

Add salt, pepper and dried herbs immediately. I used a blend of Italian herbs, but you can add any seasoning you like.

After 5 minutes, the chicken fillet and beans are ready, serve it hot, garnished with finely chopped herbs. In my opinion, chicken with beans is a completely self-sufficient dish and does not need a side dish, however, if you still want to serve it with a side dish, then I would recommend rice.

Before you start cooking red beans with chicken, it’s worth saying a few words about it. Beans are a very healthy product, rich in vegetable protein, and therefore are often used in dietary programs. With the help of beans, rich in fiber, people fight extra pounds.

In this dish, you should take care of the beans in advance. It should be sorted out and washed. Red beans should be soaked for 8-12 hours. Based on practice, I will say that it is convenient to do this overnight - soak it and forget it, and the very next day you can start cooking the product. In addition, soaked beans after cooking do not cause gas formation in the intestines.

After soaking, drain the water and fill the pan with beans with fresh water.


Place the beans on the stove and watch: as soon as the water boils, foam will form. Of course it should be removed.


Cook the beans for 2-3 hours. After 1.5 hours, you should periodically taste the beans so that they do not turn into porridge, as some beans cook faster and some slower.

You should not add salt to the beans during cooking, otherwise the product will be tough.
Rinse the finished beans under running water.


Peel the garlic and onions. Cut the onion into rings, chop the garlic with a knife. Heat vegetable oil in a frying pan, fry onion and garlic until golden. Remove vegetables from the pan into a bowl.


Wash the chicken breast and cut it into thin strips, so it will fry faster.


Add chicken pieces to the oil heated in a frying pan, fry over high heat for about 5 minutes. Then add spices, tomato paste, and soy sauce. Pepper and salt to taste.

To prepare the dish, I needed these ingredients. Cover the beans with cold water and leave for a couple of hours, then drain the water. Pour clean water over the beans, put on the fire, and after the water boils, reduce the heat. Cook the beans until tender (about 1-1.5 hours). The cooking time depends on the type of beans. The beans should become soft, but not mushy. At the very end of cooking, add salt to taste. Strain the beans through a colander. Do not throw out the broth in which the beans were cooked; it may be useful when cooking chicken.

Wash the chicken, dry it, cut it into portions, lightly salt it and leave it in the refrigerator for a couple of hours.

Then place the chicken pieces in a frying pan heated with vegetable oil and fry until golden brown (half cooked).

Peel the carrots and onions.

Cut the onion into small cubes, grate the carrots.

Fry the carrots and onions, stirring occasionally, until golden brown, then add the cooked beans.

Pour tomato sauce into the fried vegetables and beans and stir. Instead of tomato sauce, you can use tomato paste or tomato juice, adding salt, sugar and spices to taste.

Cook the chicken and beans in the oven for about 40-50 minutes. Then turn off the oven, open the door, and let the dish sit for a while.

Chicken cooked in the oven with beans in tomato sauce turns out soft, tender, juicy and very tasty.

Pickled mushrooms are cut into small pieces and added to the rest of the cuttings. Sliced ​​cucumbers should also be sent there.

Canned beans, always white and without tomatoes, should be placed in a colander and rinsed under running water. When the water has drained, the product can be added to the bowl with vegetables, mushrooms and meat. At the end, all ingredients are seasoned with mayonnaise - store-bought or homemade, kneaded and salted to taste.

Pre-soaked beans overnight should be boiled and then remove excess moisture using a colander. The fillet is boiled, cooled and cut into small cubes. The crackers are rubbed with garlic, sprinkled with oil and dried a little in the oven. The cucumbers are chopped, and all products are mixed, including corn, and seasoned with sauce. The only thing that is not added to the salad at this stage is crackers.

After the dish has stood and soaked, you can add crackers to it, mix everything and serve. In summer, instead of pickled cucumbers, you can take fresh tomatoes, add mustard to sour cream, and use boiled corn.
