  6. Cover the pan with a lid and marinate for at least 24 hours.

How to cook a whole rabbit:

  • Rinse and dry the carcass.
  • Pork lard must be cut into thin strips, and then stuffed into the carcass.

Previously, I had already prepared rabbit kebab, but here I decided to experiment a little and create something between that kebab and the now traditional dish of rabbit stewed in sour cream. Of course, since we were preparing barbecue, no one planned to stew anything, but before the final cooking of this dish on the grill, the rabbit meat was marinated for at least about an hour in a marinade that included sour cream. So, I’m telling you how my experiment happened, which resulted in simply incredible results.

We cut the washed rabbit carcass into portioned pieces, if possible (as far as possible), cut out the extra bones (for example, from the legs), I highly recommend leaving the ribs as is, since these are the most delicious pieces of our future kebab.     What do you need:

    • rabbit meat – 1 kg 200 g;
    • onions – 6 pieces;
    • vinegar - 2 tbsp. spoons;
    • mayonnaise – 2 tbsp. spoons;
    • salt – 1.5 tbsp. spoons;
    • mustard – 2 teaspoons;
    • bay leaf 2 pcs.

    Thinly slice the onion into rings. Then add vinegar. Then add salt and pepper. While stirring, you need to crush the onion pieces - its juice is needed for the marinade.

    Cut the prepared meat (washed and without film) into pieces and place in a container, pour in the previously prepared mixture. Pour in mustard and mayonnaise. All ingredients must be thoroughly kneaded, covered with a lid, and then left overnight in the refrigerator.

    Thread the marinated meat onto skewers. You can cook shish kebab in another way - place the rabbit meat on the grill. Cook the shish kebab on coals for about 50 minutes, depending on the intensity of the fire and the quality of the meat. Serve the dish in a sauce of your choice, with herbs and salads.

    What do you need:

    • medium-sized bulbs – 5 pcs.;
    • rabbit meat – 1 carcass;
    • tomato paste – 500 ml;
    • water – 500 ml;
    • vinegar 9% - 2 dessert spoons (10 ml each);
    • salt and spices - to taste.

    After washing, the carcass should be dried with a waffle towel. Then separate the meat from the bones. Cut the fillet into portions. Finely chop the onion and mix the paste thoroughly with water until smooth. Salt the meat in a deep bowl, add ground pepper. Then mix everything with onions. Pour in vinegar and diluted paste.

    The meat should be marinated in a cold place for at least 5 hours. Then thread it onto skewers along the grain. If you choose to cook shish kebab on the grill, do not forget to leave some space between the pieces. The kebab takes about 50 minutes to prepare. Turn the meat over for frying from different sides every 3 minutes, and also pour over the aromatic marinade. Preparation will take approximately 6 hours.

    With the addition of orange juice


    What do you need:

    • rabbit carcass – 1 piece;
    • freshly squeezed orange juice – 1 liter;
    • garlic – 1 pc. (head);
    • tomatoes – 5 pcs.;
    • vegetable oil (any) – 45 ml;
    • salt and ground pepper to taste.

    Place the chopped meat in a large bowl. Season the finely chopped garlic with salt and pepper. Rub the pieces of rabbit meat with the resulting garlic mixture. Pour in vegetable oil and then add orange juice. Knead all ingredients well. Place the bowl of meat in this marinade in the refrigerator for 8 hours.

    Cut the tomatoes into pieces so that they can be strung on skewers, alternating with pieces of meat. Cook the shish kebab on the grill for about an hour or a little less. You need to turn the skewers every 4 minutes. If you want to get aromatic and tender meat, you must pour marinade over it.

    With added vinegar


    What do you need:

    • rabbit carcass – 1 piece;
    • onions – 2 pieces;
    • vinegar 70% - 25 ml;
    • salt and pepper to taste;
    • bay leaf – 3 pcs.;
    • water – 2 glasses.

    Select the fillet and cut into medium portions. Place the meat in a deep bowl. Coarsely chop the onions and add to the meat along with the spices. Add salt and mix again. Add vinegar diluted in water. Knead the marinated meat well and leave in the cold for 4 hours.

    When placing the meat on a skewer, brush all pieces with butter to soften them. Cook the shish kebab for about an hour, basting with marinade. Don't forget to monitor the cooking.     What do you need:

    • rabbit carcass – 1 pc.;
    • large oranges – 8 pcs.;
    • apple cider vinegar – 40 ml;
    • mustard – 2-3 drops;
    • juniper (berries) – 1 tbsp. l.;
    • ground coriander - a pinch;
    • salt - to taste.

    Squeeze juice from oranges. Separate the cake. To do this, the fruit must be passed through a sieve. Mix the resulting 3 cups of liquid with apple cider vinegar. Add mustard to the mixture and add coriander. Then add lightly crushed juniper berries. Mix the ingredients well and add salt first.

    The marinade should have a sour, unsalted taste. Place pieces of rabbit meat into the mixture and rub the meat well with the marinade. Place in the refrigerator for an hour to an hour and a half. Once cooled, stir and bake. This recipe is easy to prepare. The shish kebab cooks quickly.

    What do you need:

    • rabbit – 3.5 kg;
    • bio-kefir – 1 l;
    • onion – 200 g;
    • lemons – 5 – 6 pcs. medium size;
    • bay leaf – 2 pcs.;
    • ground black pepper - a pinch;
    • salt - to taste.

    Rinse the carcass and pat dry with a waffle towel. Place finely chopped pieces of rabbit meat into a deep saucepan. Cut the peeled and washed onions into rings. Pour boiling water over the lemons, then cool and wipe dry. Then cut the fruit thinly into slices.

    Place chopped onion in a separate bowl. Add chopped lemon along with juice. Then pour in kefir. Add chopped bay leaves and pepper. Add salt and mix. The mixture should be a little salty. Pour the contents of the “kefir” bowl into the pan with the meat. Knead thoroughly with your hands, cover and refrigerate overnight.

    • sour cream – 150 g;
    • mustard – 1 tsp;
    • garlic – 2-3 cloves;

    • dry basil - a pinch;
    • salt - to taste.

    Wash and dry the rabbit carcass. Chop into pieces. Mix the added garlic with mayonnaise in a deep enamel bowl. Add sour cream and spices. Add salt and knead well.

    • red wine – 450 ml;
    • salt – 2 tbsp. l.;
    • onion – 200 g;
    • honey – 2 tsp;
    • thyme – 1 sprig;
    • allspice – 2-3 peas.

    You can chop the meat into pieces, and if you wish, you can roast the whole carcass on a spit. Cut the onion into thin rings and mix with wine. Add thyme and peppercorns to the mixture. Salt the marinade and rub the rabbit meat with it. Place the vessel with meat in the cold.

    After 3 hours, add honey and knead well. Leave for 40 minutes. Thanks to the use of honey, the meat will turn out with a golden crust, and thanks to the wine, it will be aromatic and soft.

    • rabbit carcass – 1 pc.;
    • beer – 1.5 l;
    • onion – 250 g;
    • spice “For meat” - to taste;
    • salt - to taste.

    Cut the onions thinly into circles. Pour beer into a deep bowl and add onion. Pour spices into a container and add salt. Place rabbit meat in marinade. Knead well, rubbing the meat with a mixture of beer and onion.
