Shish kebab should be grilled over the coals of fruit trees, especially cherry or apricot. While the wood is burning in the grill, cut the rabbit carcasses into small pieces and thread them onto skewers. Experts do not recommend using vinegar in marinade; it kills the natural taste of meat, and wine adds neither taste nor aroma.

Ingredients for rabbit kebab

  1. Rabbit meat – 1.5 kg.

  3. Mayonnaise – 250 gr.
  4. Ripe tomatoes.

  • prepare the marinade: for it you will need to mix mayonnaise, salt with garlic and spices and onion, ground in a meat grinder, so that the meat is better saturated with onion juice;
  • keep the meat in the marinade in the refrigerator for 5 hours;
  • when threading meat onto a skewer, be sure to alternate it with onion rings in the marinade and pieces of ripe tomatoes; You can also add pieces of lard - this will make the rabbit juicier;
  • place the skewers tightly and periodically turn them around their axis until it is browned - this way the meat retains the juice inside and is fried evenly on all sides;
  • during frying, you can pour wine over the meat, but it is best to use the remaining marinade for this in order to better soak it; The kebab will be ready with the formation of a golden crust.

How to serve shish kebab

To surprise your guests, serve the kebab on a large platter, decorated with grape leaves or various herbs. This will make your treat look especially appetizing. Rabbit goes well with a variety of ketchups and sauces. Serve the meat with light vegetable salads, baked or boiled potatoes, and pickled cucumbers. Make some special sauce. Rice and fried onion rings also go well with rabbit kebab. Dry wine is served as a drink; it goes well with any meat, fish and vegetables. But here the choice is up to your preferences.

1. As I already said, rabbit meat is quite dry. Therefore, vinegar marinade is not suitable for it. I cook rabbit kebab in a kefir or mineral water marinade. But it is better to combine both components, and tan is best suited for this - it is a fermented milk drink that is also carbonated. Mix a glass of tan with the barbecue seasoning mixture. Season the rabbit meat with garlic. Leave for 5 minutes. It is better to use rabbit meat that is moderately fatty; fleshy thighs are best suited for barbecue. Cut the pulp into medium-sized pieces - 3-4 pieces come out of one leg.




2. Marinate the meat in a tan for about 12 hours. As usual, it is better to put the kebab under pressure in the refrigerator overnight.




3. Thread the meat onto skewers, alternating with vegetables. To make the kebab softer and juicier, cherry tomatoes are best. When baked, they will release their juices to the meat, and it will not dry out. Onions are also good - fresh, not pickled. I think you'll like this one too

Ingredients:

  • 1 kilogram of rabbit meat;
  • 0.5 liters of sour cream;
  • 5 onions;
  • 1 tomato;
  • 1 teaspoon ground coriander;
  • 0.5 teaspoon of cumin;
  • salt and black pepper to taste;
  • fresh vegetables for garnish.

Preparation:

Cut the well-washed rabbit meat into portions. Sprinkle it with coriander, cumin, black pepper and salt. Then add the chopped onion and sour cream. Marinate in the refrigerator for 2-3 hours. Thread the meat, onions and tomato slices onto skewers one by one. Fry the rabbit on hot coals until cooked. Serve with fresh vegetables.

Rabbit carcass kebab

Ingredients:

  • 1 rabbit carcass;
  • 4 onions;
  • a mixture of red and black ground pepper;
  • 4 bay leaves;

  • 1 large rabbit carcass;
  • 1 liter of orange juice;
  • head of garlic;
  • 5 fresh tomatoes;
  • 2-3 tablespoons of vegetable oil;

Grilled rabbit is easy to prepare, and you can cook it in several ways: by dividing the carcass into pieces using a barbecue grill or whole on a spit. We will look at both of these cooking methods.

Rabbit on the barbecue grill

To prepare a butchered rabbit, you will need the following ingredients:

  • carcass – 1 pc.;
  • onions - 4-5 medium heads;
  • mineral water – 800 ml;
  • barbecue spices – 1 pack;
  • pepper, salt - to taste.

Let's look at the step-by-step cooking recipe:

  • Cut the carcass into medium-sized pieces.
  • After this, they need to be rinsed well, placed in a bowl of water, and left to stand for about 4-5 hours in the water.
  • Peeled onions need to be cut into half rings, as thin as possible - this will help the meat to be better saturated with taste and aroma.
  • Place the meat in a saucepan, cover with onions and add spices. After this, simply pepper, salt the rabbit and add mineral water to it. Mix. Place the workpiece to marinate in the refrigerator for 5-6 hours (it is better to let it stand overnight).
  • Place the pieces on the grill grate, having previously greased it with oil so that it does not stick.
  • There is nothing special about frying - it is fried like regular pork or lamb. Don't forget to turn over periodically. The dish takes about 20-30 minutes to prepare.

Whole rabbit on spit

You can also cook a rabbit without cutting up the carcass. Such a rabbit on the grill will look much more festive on your table. So, prepare the following ingredients:

  • carcass – 1 pc.;
  • onions – 3 pcs.;
  • pork lard – 150 g;
  • any vegetable oil – 50 g;
  • garlic - several heads;
  • dry white wine – 150 ml;
  • thyme – 1 tsp;
  • chopped bay leaf – 1 tsp;
  • butter – 55 g;
  • pepper, salt, spices - to taste.

How to cook a whole rabbit:

  • Rinse and dry the carcass.
  • Pork lard must be cut into thin strips, and then stuffed into the carcass.
  • Peel the onions and finely chop.
  • Place the carcass in a bowl, add chopped onion, thyme, spices, bay leaf. Then pour olive or sunflower oil over the meat, salt and pepper. To marinate, it needs to stand in the refrigerator for about 6 hours.
  • The rabbit is placed on a spit and placed over the grill so that it is entirely above the coals. First, it is fried for about 10 minutes, after which chopped garlic is added to the marinade and the marinade is poured on top. After this, you need to bake the rabbit for another 40 minutes.
  • After you remove the rabbit from the spit, brush it with butter, sprinkle with herbs and serve.

Incredibly juicy dietary rabbit meat can be given even to children. You are unlikely to gain weight from this dish, and besides, it is simply incredibly tasty.

Kebabs are always delicious, and for anyone who hasn’t tried cooking with rabbit yet, I recommend it! Rabbit kebab can be prepared by marinating the meat in tomato or mayonnaise marinade. I prefer to marinate meat in tomato marinade with onions.

To prepare tomato marinade for rabbit kebab, take homemade ketchup; if you don’t have that, use fresh tomatoes or tomato paste (dilute a couple of spoons in 0.5 liters of water). To make the meat soft, I advise you to soak it in cold water for a couple of hours.

Prepare the products according to the list.

We wash the rabbit carcass under running water. We cut off the hind legs first, cutting along the joint.

Cut the carcass in half into 2 parts.

Cut the lower part of the carcass into 4 parts.

From the top of the carcass we cut off the front legs with shoulder blades.

We do this with the remaining top carcass: cut off the neck, divide the rest into 4 equal parts, cutting along the ridge and breast.

Place all parts of meat in a saucepan. Cut the onion into rings, add onion, salt and seasoning to the meat.

Add ketchup and vinegar and mix well. Leave to marinate in the refrigerator for at least 5 hours, I left it overnight.

We string the meat onto sticks along the bone so that the rabbit is better fried.

Fry on the grill until done. Turn over every 4-5 minutes and pour over the ketchup in which the meat was marinated, diluting it in half with water.
