Therefore, I suggest you prepare your own caviar from honey mushrooms.

In this recipe we will add carrots for a sweet note and of course onions will make our caviar piquant.

In this recipe I will tell and show how I prepare mushroom caviar from honey mushrooms with carrots and onions. In my opinion and taste, this is the most ideal recipe.

First you need to boil the mushrooms in salted water for about 40 minutes. But it is better to drain the first water after 5 minutes when it boils, and rinse the mushrooms.

Be sure to remove the foam!!!

While the honey mushrooms are cooking, let’s take care of the vegetables. Peel the onions and carrots.

Cut the onion into half rings and the carrots into cubes.

Fry in vegetable oil until half cooked.

The mushrooms are ready, we drain them and mix them with carrots and onions.

Pass through a meat grinder with a large grill.

Sort the mushrooms, set aside the young ones for pickling. Wash the selected legs and overgrown honey mushrooms. Place in a saucepan, fill with water. Cook for 40 minutes. Count the time after boiling.



Drain in a colander, removing excess liquid. Peel the onions, carrots, garlic. Chop the onion into small cubes.



Grate the carrots with shavings. Fry, placing them in a frying pan one at a time.



Pass the cooked and cooled honey mushrooms through a meat grinder. If you want to chop it into pulp, repeat the process. In addition to the usual meat grinder, they use a blender, food processor and other devices.



Place the ground mushrooms in the frying pan with the vegetables. Add more oil, salt and black pepper. Mix the contents well. Make sure there is enough oil during frying. Top up if necessary.
Continue frying the mixture for 30 minutes. At the same time, send the jars for sterilization.



To ensure safety, it is recommended to sterilize the jars. Although this process, provided it is stored in a sufficiently cold room, can be skipped. Process the jars in a water bath. For half-liter containers, the duration of sterilization is 10-15 minutes.

Caviar is an excellent side dish for meat dishes, boiled potatoes, and is also great for making sandwiches for a snack. Honey mushrooms are ideal for preparing snacks. They have a fairly dense structure. And during heat treatment it is preserved, which allows you to get a slightly crispy final product. And the more ingredients, the more satisfying, tasty and appetizing it turns out.

Ingredients:
1.5 kg of fresh honey mushrooms
2 medium tomatoes
1 large onion
1 carrot
150 ml vegetable oil
1 clove of garlic
Salt, ground black pepper to taste

How to make a snack from honey mushrooms with tomatoes through a meat grinder


Clean fresh honey mushrooms from plaque and dirt with the back of a knife blade. Place the mushrooms in a saucepan with plenty of boiling water and bring to a boil. After boiling, drain the water and pour new boiling water over the mushrooms. Bring to a boil again. Add a little salt and cook the mushrooms at low boil for about half an hour.

Place the boiled honey mushrooms in a frying pan with heated oil. Fry them over medium heat for about 10-15 minutes, stirring with a spatula.



Pass the fried mushrooms and vegetable mixture through a meat grinder or grind in a blender. Transfer the honey mushroom caviar with tomatoes to a large frying pan and add a couple of tablespoons of water. Simmer everything together for a couple more minutes, stirring continuously with a spatula.

It turned out to be a little more than 1 liter of boiled mushrooms. For caviar you still need to take 2 onions, 1 carrot, salt, ground black pepper, 3-4 tbsp. spoons of vegetable oil.



Sauté onions and carrots in oil. Add mushrooms, salt them, pepper them, and sprinkle with mushroom seasoning. Simmer on low heat for 30 minutes under the lid. Don’t forget to stir periodically with a wooden spatula, as mushrooms are very prone to sticking. Let the prepared mushrooms cool.




Next, grind the mushrooms in a meat grinder. Mushroom caviar is ready.



To preserve caviar for future use, it is best to freeze it. It does not lose its qualities when frozen. To do this, place the bag of caviar in a rectangular container and put it in the freezer. When the caviar freezes, lower the container into warm water for a few seconds and the briquette with caviar will come out well. These briquettes are convenient to store in the freezer. And processing takes a very short amount of time. Honey mushrooms are good in any form, fried, boiled, or even dried. Recently, another unusual dish has become very popular - caviar, namely mushroom caviar made from honey mushrooms with various vegetables.

These preparations are made in jars and stored in a cool place or cellar. Confess who prepares such snacks for the winter and then surprises everyone. After all, such a miracle can be added to the fillings of pies. It turns out very tasty. And when you take it out, you will be enchanted by the aroma and remember those wonderful minutes of walking through the forest.

  • Honey mushrooms - 2 kg
  • Onions - 600 g
  • Garlic - 1 head

Stages:

1. Rinse the mushrooms in water, removing all sticks and specks. Then place them in a saucepan and fill with water, lightly salt in moderation. Bring to a boil, remove the foam with a special spoon. And cook for about 40 minutes.


2. Then drain all the water and let them cool, transfer them to a bowl.



4. Then fry the onions in a frying pan with vegetable oil. Chop it into cubes and fry until nicely crusted, then add the prepared mass and stir. Add finely chopped garlic and salt if necessary. And fry until done, about 1 hour, so that all the liquid is gone.


5. And then place the prepared mushroom caviar in clean and dry sterile jars and close under the nylon lid. Do not use metal ones for a special seaming machine. You can take screw ones. But, before this, you need to put citric acid on top of each jar, that is, sprinkle it over the entire surface.

Please note that do not place the mixture all the way to the top. Store strictly in the cellar or refrigerator.

3. Then place them in a meat grinder and grind until you get a porridge like this.


4. Then grate the carrots on a coarse grater and cut the onions into pieces.


Place this vegetable dressing in a frying pan and simmer with vegetable oil until the onion is soft and golden over low heat.

5. Next, as you guessed, add twisted honey mushrooms. Fry over low heat and in vegetable oil. Don't forget to add salt and pepper if desired. Avoid burning and overcooking.

3. Then turn on the appliance and quickly puree everything. Use a grater with medium or small holes.


4. Do the same with peeled carrots and onions.


5. Turn on the multicooker and select the “Frying” mode with the lid open, first simmer the vegetables with vegetable oil for about 10 minutes, at a temperature of 120 degrees.

After 20 minutes, the honey mushrooms need to be washed in a colander. Take a few minutes to completely rinse off the salt.


When the liquid has completely drained from the mushrooms, they need to be passed through a meat grinder to grind the mushrooms as much as possible. Set aside in a separate bowl.


Peel the onions, cut into 4 parts and grind in a blender or using a meat grinder.


Mix the onion with honey mushrooms, add a small amount of salt. Heat the vegetable oil in a frying pan and add the mushroom mass into it.


Cook until all the liquid has evaporated. Don't forget to stir periodically, otherwise the caviar may burn. Approximate cooking time on low heat is 30 minutes.


After the honey mushrooms are ready, they need to be distributed into pre-sterilized jars. Cover with plastic lids and place in the refrigerator.


Caviar can be stored for one year. But if you prepare several jars, it will be gone in a couple of months. So cook more.

Honey mushroom caviar through a meat grinder


There is another recipe for preparing mushroom caviar for the winter. We will grind the products using a meat grinder. So, let's take a step-by-step look at the entire process.

Ingredients:

  • 1 kg of peeled mushrooms.
  • 3 tbsp table salt.
  • 2-3 pieces of peeled carrots.
  • 2 heads of onions.
  • 50 ml vegetable oil.
  • Pepper to taste.

Cooking method

It is assumed that we have already cleaned and washed the mushrooms thoroughly. Now they need to be placed in a deep pan and filled with cold water. The volume of liquid should exceed the volume of honey mushrooms by 3-4 times.


Cover the container with a lid, place on the burner and bring the mushrooms to a boil. During the cooking process, foam forms in the pan; it must be skimmed off using a slotted spoon.


After boiling, you must add the amount of table salt specified in the recipe. Cover again and cook for 30-40 minutes.


When the honey mushrooms are cooked, they need to be rinsed well under running water and transferred to a bowl.


Peel the onion and cut into half rings with a small thickness. Chop the carrots into cubes as shown in the picture below.


Heat vegetable oil in a frying pan, add onions and carrots and fry them until half cooked.


When the vegetables are ready, add them to the plate with honey mushrooms.


Place a fine wire rack in a meat grinder and scroll the vegetable and mushroom mass through it.


Now the caviar needs to be placed in a frying pan, pepper, salt and fry for about half an hour over medium heat.


When the dish is ready, be sure to taste it, if necessary, add more pepper and salt.

Compact the finished caviar into sterile jars. The container needs to be filled up to its shoulders. Cover with lids, but do not screw them on.


Place the jars on a baking sheet and place in the oven for 40 minutes, which must first be heated to 110 degrees.


After this, remove the jars from the oven and tighten the lids tightly. Cover the workpiece in an inverted position with a towel and set aside until completely cool.

Mushroom caviar from honey mushrooms with carrots and onions


Despite the fact that there are many recipes for preparing mushroom caviar, each of them has a different taste. Let's try to make a snack one more way.

Ingredients:

  • 1 kg honey mushrooms.
  • 250 g carrots.
  • 250 g onions.
  • 5 cloves of garlic.
  • 60 ml vegetable oil.
  • 1/3 tsp vinegar essence.
  • 4 peas of allspice.
  • 1 tbsp table salt.
  • Ground pepper as desired.

Method of preparing caviar

If you use fresh wild mushrooms, they need to be carefully sorted, peeled and washed. Then add salted water and cook for half an hour. The honey mushrooms will be ready when they settle. Now you need to drain the liquid and place the mushrooms in a separate bowl.


Let's start preparing the vegetables. Peel the onion, rinse and chop into medium cubes, as shown in the image.


Grind the carrots on a coarse grater.


Heat the oil in a deep frying pan with a thick bottom, add the vegetables and reduce the heat to low. Onions and carrots should not be fried, but stewed. When they become soft remove from the stove.


Now the onions, carrots and mushrooms need to be twisted in a meat grinder, and then put back into the frying pan.


Add pepper, bay leaf, vinegar essence. It should be noted that vinegar is not needed as a preservative, but to give the caviar a sour taste. If you do not like this taste, then table vinegar can be excluded from the recipe.


At the end of cooking, add chopped garlic. Cook the caviar until all the liquid has evaporated. Then the pan must be removed from the stove.


While the caviar is hot, it needs to be placed in glass jars. Screw on the lids tightly and store in the refrigerator. After a couple of hours, you can take a sample.
